Vegetable Recipes
Veggies - we didn't want to do it, we didn't want to do it. At Christmas children
fall asleep with visions of sugar plums, not broccoli, dancing in their
heads. At no time of the year do they dream rapturously of broccoli
or spinach. The vegetable, oh the vegetable, is but an evil intruder
needing to be eaten before dessert is allowed.
Mothers know this,
and they have their ways. Some grate child-popular cheddar cheese over
the broccoli. Some mix it with slivers of black olives, and send their
children on a treasure hunt, chewing the dread broccoli in hopes of
finding an olive.
We didn't want to
do it, but we did. As adults we change our minds about vegetables and
learn to love them as they are and turn them into great cuisine. Some
of us can't wait to get to that broccoli stalk. Try these recipes and
