Our awareness of Mexican food continues to evolve. We have long used Mexican recipes that evolved at borders with borrowed ingredients. Those recipes are authentic, though they speak of adjustments to place, to availability of ingredients.
Slowly we have uncovered the depth of Mexican cooking, once hidden in the interior. Today we also have the magic from great chefs who know how to adjust ingredients without losing authenticity. Even with variations, Mexican cuisine is brilliant, original, one of the great cuisines of the world.
It is frequently difficult to separate the authentic cooking of the interior from our beloved fast-food, Tex-Mex cooking. Most of the recipes you see here are from the interior, or have been adapted as 'fusion' cooking.
