 Old-Fashioned Asparagus Soup Supreme

From Shari's collection of old-fashioned recipes, this is over 100 years old

      • 1 large bunch asparagus
      • 2 large potatoes, diced
      • Salt to taste
      • 1/4 cup butter
      • 1 1/2 quarts milk
      • 1 tablespoon flour
 

Method

Cut asparagus into small pieces; place in a large saucepan. Add potatoes and enough water to cover; bring to a boil. Add salt; reduce heat. Cook until tender. Add butter, then add milk. Add enough milk mixture to flour to moisten; stir into soup. Cook, stirring, until thickened.

Makes 4 servings.
