Old Fashioned Pound Cake

From Shari's collection of old-fashioned recipes, this is about 180 years old

    • 9 large eggs, separated
    • 2 cups sugar
    • 2 cups butter
    • 4 cups flour, sifted
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1 teaspoon lemon extract
 

Method

Beat egg yolks until fluffy; add sugar gradually, beating until pale yellow color.

Place butter in another bowl; cream until light. Add flour, baking powder and salt; cream well. Add egg mixture to creamed mixture; beat well. Add lemon extract and unbeaten egg whites; beat until well mixed.

Pour into well greased tube pan. Bake in preheated 300F oven for 1 hour and 45 minutes or until done.
