Masala Chai (with variations)

Chai has become popular everywhere.  First embraced by health food enthusiasts, the rich taste has caught on with everyone.  Though available in packages, a home made chai is infinitely better and not so difficult to make.   • 1/3 water to 2/3 milk
  • 1 teaspoon of tea leaves for each cup measure (plus a bit extra)
  • freshly chopped ginger
  • 1 cardamom pod per measure split
  • enough sugar to make it as sweet as you like it
  • A pinch of Chai masala (available ready in all stores) per measure
 

METHOD

For a mixture that is slightly thick and sweet - (probably the more traditional way of making tea in India) add the spice mixture (Chai masalla) to the water and heat. When the water boils, add tea and a little later add sugar and milk. Let the mixture stand for half a minute or so and remove from heat.

The other method is to let the water/spice mixture boil and add the tea after removing from heat. Cover allow tea to brew for a few minutes then add milk and sugar.
