Ghoulash Pasta

  • 1 pound browned and drained fresh ground chuck
  • 6 cups chopped or diced fresh tomatoes (or canned with juice, if that's all that's available)
  • 1 tablespoon olive oil
  • 1/4 cup chopped fresh onion
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 cups cooked small elbow macaroni (cook according to package directions)

 

 

METHOD

Set aside cooked macaroni after draining and washing it in colander.

Brown meat in a hot skillet Drain grease from cooked meat by putting into a colander, and washing under running hot water. Discard grease and rinse water.

In a 2 or 3 quart pot, put meat, tomatoes, oil, onion, salt, and pepper. Cook stirringroccasionally over medium heat for about 30 minutes.

Add cooked macaroni and stir to combine. You may keep hot over very low heat until ready to serve. Serve with a tossed salad and bread.

Serves: 4- 6
