Sausage & Wile Rice Casserole

This is a wonderful combination.  Wild rice can be dry, but the sausage keeps it moist.

  • 6 ounces wild rice 
  • 1 pound bulk sausage
  • 1 can mushroom soup
  • 1 cup chopped fresh mushrooms
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 cup chicken broth
  • 1/4 cup minced celery
  • 1/2 teaspoon pepper

 

 

METHOD

Preheat oven to 350°F.

Cook rice according to package directions.

Brown sausage over medium heat and drain off fat.

Combine rice, sausage, and remaining ingredients in 2-quart casserole and bake  in preheated 350°F oven for one hour. 

Serves: 4
