Hot Dog, Bean and Cornbread Casserole

Cornbread is perfect with the hot dogs and beans

  • 1 lb. hot dogs
  • 2 (1 lb. each) cans baked beans
  • 1/2 cup catsup
  • 1/2 cup water
  • 1 tablespoon prepared mustard
  • 3/4 cup flour
  • 1 tablespoon sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 2/3 cup cornmeal
  • 1 egg, slightly beaten
  • 2/3 cup milk
  • 1/4 cup melted shortening
  • 1/3 cup chopped onions
 

Method

Preheat oven to 400°F.

Cut hot dogs into 1/2 inch pieces. Put in baking dish (12 x 8 inches) with beans, catsup, water and mustard.

Combine flour, sugar, salt and baking powder in large bowl. Stir in cornmeal. Add egg and rest of ingredients. Stir just enough to combine. Spread evenly over beans.

Bake in preheated oven for 35 to 40 minutes.

Serves: 8 to 10
