Method
Combine ground beef, jalapeno peppers, cumin, salt and pepper. Mix lightly
but thoroughly - do not overwork or meat will toughen. Divide beef mixture into 4 equal portions and shape into 1/2
inch thick patties, each 4 inches in diameter.
Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high. When the grill is ready, brush the grill rack with vegetable oil. Place patties on grill 3 to 5 inches from coals; cook 4 to 8 minutes
each side, turning once only, or to desired degree of doneness (145°F for medium-rare, 160°F for medium or 170°F for well done).
Sprinkle 1 tablespoon cheese on
each burger 1 minute before end of cooking time. Place tomato slice on bun
bottom. Top each with grilled burger and cover with roll top.
