Southeast Asian Beef and Noodle Salad

Absolutely fabulous.  Get fine quality beef for this recipe.

  • 6 ounces Chinese noodles
  • 1/2 teaspoon sesame oil
  • 1 pound sirloin steak, all fat removed
  • 4 cups shredded romaine lettuce
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup ) fresh basil, chopped
  • 1/4 cup) fresh flat leaf parsley, chopped
  • 1 English cucumber, seeded, sliced very thin

Sauce

  • 1 tablespoon soy sauce
  • 1 garlic clove, finely minced
  • 1 1/2 tablespoons Asian fish sauce
  • 1/4 cup fresh lime juice
  • 1/4 cup water
  • 1/8 teaspoon sugar
  • 1/4 teaspoon dried hot red pepper flakes
 

METHOD

Cook the noodles in boiling water according to package directions until done. Drain and run under cold water to stop cooking. Toss with sesame oil and set aside.

Grill steak until cooked. Remvoe from grill and let stand 10 minutes to 'set' the meat. Slice into fine slices.

Arrange lettuce on serving platter. Top with herbs and toss.

Sauce: Combine soy sauce, garlic, fish sauce, lime juice, water, sugar, and pepper flakes in food processor.  Blend until emulsified.

Dividing into thirds, drizzle sauce oer steak, then the noodles, and then the salad. Toss to coat each. PPut noodles over greens, then cover with steak slices. Surround salad with cucumber slices. Serve immediately.
