Sautéed Rabbit

This is a simple, but delicious recipe for rabbit. Though most of us think twice before eating rabbit, it is a delicious meat.

  • 1 medium rabbit, cut in pieces
  • 1 cup white wine
  • 1/4 cup olive oil
  • 1 medium onion, chopped
  • 2 or 3 garlic cloves, chopped
  • 1 tablespoon dried oregano
  • 1 teaspoon dried rosemary, or 1 tablespoon fresh rosemary
  • 1 bay leaf
  • 1 tablespoon fresh parsley, chopped
  • Salt to taste
  • Dried chili flakes (optional)

 

 

METHOD

Place all ingredients in a large fry pan and add enough water to barely cover the rabbit. Bring to a boil.

When boiling, reduce flame, cover and simmer for about 40 minutes. Uncover and raise flame. Cook until liquid is reduced and rabbit is browned.
