Ham Loaf

 

"Earsel Cooley was the dairy farmer down the road from our (chicken) farm. Every day, when I got home from school, my very first assignment was to take a quart molasses can filled with eggs to the Cooley's, and return with it filled with cream." Junior Trimmer

  • 1 1/2 pounds center cut fresh pork, ground
  • 1 1/2 pounds very lean smoked ham, ground
  • 11 soda crackers, soaked in 1 cup milk
  • 3 eggs

 

 

METHOD

Preheat oven to 350°F.

Mix all ingredients and make into loaf. Cover with can of tomato soup, then sprinkle brown sugar over top of soup.

Bake for 2 hours in preheated 350°F oven in pan of water.

Serves 9
