Cheese and Beer Dip

The small amount of blue gives zip to this dip.  Great at super bowl time..

  • 12 ounces extra- sharp cheddar cheese, softened
  • 1 1/2 ounces roquefort or blue cheese
  • 2 tablespoons butter, softened
  • 2 medium cloves garlic, minced
  • 1 medium onion
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon Tabasco
  • 1 cup beer, heated then slightly cooled (do not use a 'lite' beer)
  • 1 round loaf of bread to use as serving bowl
 

Method

Mix cheese, butter, onion, garlic, Worcestershire and blend with an electric mixer until you reach a good consistency for dipping bread chunks. Refrigerate while working on the bread.   The cheese and butter can harden a little, but not too much.

Make a serving bowl by hollowing out center of the bread, leaving a 1" thick shell. Tear bread removed from inside into chunks, or cut into cubes for dipping. Put toothpicks into cubes for easy dipping.  Pour dip into the bread shell.
