Broccoli Knishes

This is a classic Ashkenazi recipe. Knishes were popular throughout Europe, from France to Germany to all the Slavic countries.

  • 1 cup mashed potatoes
  • 1/3 cup matzoh meal
  • 2 tablespoons potato starch
  • 1/2 small onion, finely chopped
  • 2 egg whites
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt or to taste
  • 1 cup fresh or frozen broccoli, steamed and finely chopped
  • Oil to grease baking sheet

 

 

METHOD

Preheat oven to 375°F. Lightly grease a baking sheet with oil

In a bowl combine potatoes, matzoh meal, potato starch, onion, egg whites, pepper and salt and knead together. Divide into 6 balls. Flatten each into about a 3 inch round or square. Divide broccoli evenly onto each piece, fold over, and pinch edges together to seal.

Place knishes seam side down on baking sheet. Place sheet on bottom rack of preheated 375° F oven. Bake until browned, about 30 minutes. Serve hot.

Yield: About 15 knishes
