Peas with Cashews and Mushrooms

This recipe is for fresh peas, but you can use canned or frozen. If using canned peas, omit water and sugar. Heat peas in their own liquid, then follow the rest of the recipe. At Thanksgiving and Christmas, we sometimes need ot rush as holiday meals are complex.

  • 2 cups fresh peas (frozen or canned may be used)
  • 2 tablespoons butter
  • 2 tablespoons onion, finely chopped
  • 1/2 teaspoon sugar
  • 3 medium white mushrooms, cleaned and chopped
  • 1/4 cup cashew pieces
  • Salt and freshly milled pepper to taste

 

 

METHOD

Place peas in a large saucepan and cover with water. Add butter, onion, sugar, and mushrooms and bring to a boil.

When boiling, reduce to simmer and cook for 5 - 8 minutes or until peas are tender. Stir in cashews.

Remove from heat, cover, and let stand 5 minutes. Prior to serving, drain off liquid, and season with salt and pepper.

Serves 6-8
