Mashed Potatoes

The secret to these mashed potatoes is the butter and broth combination. This calls for six potatoes, but the rule of thumb is 1 medium potato for each female guest, 1 large for each male guest.  Great for a Thanksgiving or Christmas holiday. 

  • 6 white potatoes, peeled and cut into quarters
  • 1/2 teaspoon salt
  • 1/4 cup butter
  • Strained turkey broth

 

 

METHOD

In a 6-quart pan (or larger as needed) cover potatoes with cold water and salt. Bring to a boil. Cook only until fork tender.

Drain and place over low heat to dry out, shaking pan gently for a couple of minutes.

Using a hand mixer, mash and whip potatoes. Add butter and whip through.

Add broth, a little at a time, until potatoes are soft and fluffy. Turn into a large bowl, and serve immediately.

Serves: 6
