Green Pea Salad

We spoke with Junior Trimmer about using frozen peas and we both agreed that they are easier to use than fresh. They are just as nutritious.

  • 1 pound frozen peas, thawed and drained
  • 1/2 cup diced mild cheddar cheese
  • 1/2 cup diced onion
  • 1/4 cup chopped black olives, and some halves for presentation
  • 2 diced boiled eggs, discard yolks
  • 1 boiled egg quartered long way for garnish
  • 1/2 - 1 cup mayonnaise (Start with 1/2 cup - increase as needed)
  • Salt to taste
  • 1/2 teaspoon paprika
  • 1/2 teaspoon Cajun or Creole seasoning
 

METHOD

Mix all. Let stand for a minimum of two hours in the refrigerator.
