Green Pea Salad
We spoke with Junior Trimmer about using frozen peas and we both agreed that they are easier to use than fresh. They are just as nutritious.
- 1 pound frozen peas, thawed and drained
- 1/2 cup diced mild cheddar cheese
- 1/2 cup diced onion
- 1/4 cup chopped black olives, and some halves for presentation
- 2 diced boiled eggs, discard yolks
- 1 boiled egg quartered long way for garnish
- 1/2 - 1 cup mayonnaise (Start with 1/2 cup - increase as
needed)
- Salt to taste
- 1/2 teaspoon paprika
- 1/2 teaspoon Cajun or Creole seasoning
