METHOD
In a small bowl, whisk
together oil, vinegar, vincotto, garlic, cayenne, salt and black pepper.
Set aside.
Stem spinach and wash
carefully so there is no sand. Spin dry. Toss spinach in half the dressing
in large salad bowl.
In a separate bowl, toss
the red onion and pear with half the remaining dressing. Sprinkle over
spinach.
Toss tiny gruyere cubes
over all.
Serves: 4 - 6
