French Bean Salad

This is a wonderful accompaniment to grilled and barbecued meats, and is filling enough to be a pleasant lunch dish. Green beans and shallots go well together.

  • 1 cup cooked and cooled French beans, quartered
  • 2 tablespoons minced shallots
  • 1 cup zucchini, julienned
  • 1 cup butter beans, drained
  • 1 cup corn (fresh or frozen)
  • 1 cup carrots, julienned
  • 1 cup cooked long grain rice, cooled
  • 3 cups yogurt
  • 1 tablespoon mixed garden herbs (parsley, mint, chives and rosemary) finely chopped
  • Lettuce leaves for presentation

 

 

METHOD

Combine French beans,shallots, zucchini, butter beans, corn, carrots, rice, yogurt, and herbs. Arrange lettuce leaves on a platter. Spoon bean mixture on top. Serve chilled. Excellent in summer to serve with grilled meats.
