METHOD
Preheat oven to 375°F.
Heat 1 - 1/2 cups water
to the boiling point.
Remove outer loose skin
from bulbs. Place, roots down, in ovenproof dish in which they will fit
tightly.
Drizzle top of garlic
with half the olive oil, and sprinkle with salt. Pour hot water in pan
until it reaches 1/4 inch in the pan. Cover dish tightly with aluminum
foil.
Bake for 20 minutes at
375°F. Check to determine softness and water level. Add more water,
if necessary. If very fresh, garlic may be done at 20 minutes. If not,
cook for an additional 10 minutes, covered.
Reduce heat to 350°F.
Uncover dish, and bake 10 - 15 minutes more or until garlic is completely
soft. Put through food mill or mash with pastry blender.
Yield: 1/2 cup pureed
garlic. A little goes a long way!
