Arugula and Strawberry Salad

This salad is a successful ménage à trois, mixing arugula, strawberry and a touch of Balsamic vinegar.

  • 2 bunches arugula
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Balsamic vinegar
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt
  • 3/4 cup sliced strawberries
  • 2 tablespoons scallion, chopped
 

METHOD

Clean arugula. Remove heavy stems and tear into bite-size pieces. No knives allowed!

Make dressing of red wine vinegar, Balsamic vinegar, olive oil, and salt.

Toss strawberries and scallions with 2 tablespoons dressing. Set aside. Toss arugula with remaining dressing. Mix half the strawberry mixture with arugula, and toss again. Sprinkle remaining strawberries on top of the salad.

Serves 4 - 6
