METHOD
Clean
arugula. Remove heavy stems and tear into bite-size pieces. No knives
allowed!
Make
dressing of red wine vinegar, Balsamic vinegar, olive oil, and salt.
Toss
strawberries and scallions with 2 tablespoons dressing. Set aside. Toss
arugula with remaining dressing. Mix half the strawberry mixture with
arugula, and toss again. Sprinkle remaining strawberries on top of the
salad.
