Taiwanese Fried Tofu with Dipping Sauce

Fried tofu is common throughout Asia. As with most tofu recipes, it is quite simple and the sauce is the kicker.

  • 1 pound tofu
  • 3 cups oil for frying
  • 2 tablespoons soy sauce
  • 1 scallion, sliced
  • 2 tablespoons cilantro, minced
  • 1 clove garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon sugar
  • 1/2 teaspoon vinegar
 

METHOD

Place tofu on a plate. Cover with second plate and place a weight on top. This will press out water. Let drain for about 15 minutes, then discard water.

Place tofu on its side. Cut in three large pieces. Stack the pieces together and cut from corner to corner on the diagonal to form triangles. Cut again across the opposite corners. Each slice will now have four triangles, or 12 in total. Pat dry. Set aside.

Mix together soy, cilantro, scallion, garlic, red pepper flakes, and sugar. Whisk with fork to dissolve sugar. This is for dipping.

Using a wok or deep fryer, heat the oil to 360° F. Working in batches, fry tofu until golden brown. Drain on paper towels.

Transfer to platter. Dip into sauce.

Serves: 4 - 6
