Pineapple Cream French Toast

      • 3 eggs
      • 3/4 cup half and half
      • 1/4 teaspoon ground nutmeg
      • 1 can crushed pineapple, with juice (8 oz)
      • 1/2 cup brown sugar
      • 2/3 loaf French bread, cut into 3/4 inch slices
      • 1/4 cup butter, for frying
      • Powdered sugar
 

Method

In small bowl, beat eggs, half and half, nutmeg, pineapple and brown sugar. Place bread in single layer in 9 x 13 inch glass baking dish. May need an extra dish. Pour egg mixture over bread, lifting to let liquid run under bread. Refrigerate overnight.

In the morning, melt 2 tablespoons butter in skillet. Add 3 or 4 slices bread and cook over moderate heat until golden brown on each side. Melt 2 more tablespoons butter and cook remaining slices. Dust with powdered sugar. Serve with syrup.

Makes 3 to 4 servings.
