Yellow Mustard Eggs

To vary this slightly, you can substitute spicy brown mustard for yellow mustard and call these spicy mustard eggs.

  • 4 tablespoons yellow mustard
  • 2/3 cup sugar
  • 1/8 teaspoon salt
  • 3/4 cup white vinegar
  • 3/4 cup water
  • 2 drops yellow food coloring
  • 7 peeled, hardboiled eggs
 

METHOD

Mix mustard, sugar, salt, vinegar, water and food coloring in a saucepan.

Bring just to the boil. Remove from heat and set aside.

Drop eggs in a quart mason jar. Pour heated mixture into jar over eggs.

Refrigerate and let stand 72 hours.

Add 10 turns fresh ground black pepper

Serves: 4 - 6
