METHOD
Heat oil in medium sauté
pan. Stir in onion and pepper, and sauté for 3 minutes. Add the
shrimp and stir-fry for 2 minutes. Add tomatoes and cook for 5 minutes
until tomatoes are soft and shrimp have turned pink. Season with salt
and freshly ground black pepper to taste.
Make 4 wells in the mixture
with a spoon and carefully break an egg into each well.
Cover and cook for 5
minutes until the eggs have set.
