Flamenco Eggs

Eggs poached in tomato sauce are classic in Spain, hence the name Flamenco eggs. Flamenco has little to do with this delicious dish, but it will make you want to get up and dance.

  • 2 - 3 tablespoons vegetable oil
  • 1 small onion, chopped
  • 1 green pepper, deseeded and sliced
  • 1/3 pound medium shrimp, shelled and deveined
  • 4 tomatoes, chopped
  • Salt to taste
  • Freshly milled black pepper to taste
  • 4 large eggs

 

 

METHOD

Heat oil in medium sauté pan. Stir in onion and pepper, and sauté for 3 minutes. Add the shrimp and stir-fry for 2 minutes. Add tomatoes and cook for 5 minutes until tomatoes are soft and shrimp have turned pink. Season with salt and freshly ground black pepper to taste.

Make 4 wells in the mixture with a spoon and carefully break an egg into each well.

Cover and cook for 5 minutes until the eggs have set.

Serves: 4
