Grilled Peaches with Blue Cheese and Honey

These peaches with blue cheese and hone are a marriage made in heaven.  Yes, grill the peaches!

  • 6 ripe peaches, halved and pitted
  • 2 tablespoons vegetable oil
  • 12 teaspoons Maytag Blue Cheese or mascarpone
  • 12 teaspoons honey, preferably clover
  • Black pepper to taste
  • Fresh mint leaves or sprigs for garnish
 

Method

Brush the cut sides of the peaches with oil and place on a grill preheated to medium, cut-side down.  Grill until caramelized.  Turn over and grill until almost soft, about 1 to 2 minutes more.

Transfer the peaches to a platter, cut-sides up, and place a spoonful of cheese in the center of each.  Drizzle with honey and grind fresh pepper to taste over the peaches.  Garnish with mint and serve.

Serves: 6
