Arugula, Avocado & Mango Salad

 

  • 2 bunches arugula, carefully washed and torn into bite-size pieces
  • 2 avocados, peeled and chopped
  • 2 mangoes, peeled and chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon red wine vinegar
  • Ssalt and freshly milled black pepper to taste
 

Method

Salad: Wash arugula carefully.  It can be sandy, so do not rush over this step.

Divide the arugula evenly among 6 plates. Sprinkle avocado and mango over arugula leaves so the colors are nicely distributed.  Color is the guide to artistry!  Set aside.

Dressing: In a small bowl, whisk together the oil, balsamic and red wine vinegars, salt and pepper  to taste.

Drizzle each salad with the dressing. Serve immediately.

Serves: 6
