Salad: Wash arugula carefully. It can be sandy, so do not rush over this step.
Divide the arugula evenly among 6 plates. Sprinkle avocado and mango over arugula leaves so the colors are nicely distributed. Color is the guide to artistry! Set aside.
Dressing: In a small bowl, whisk together the oil, balsamic and red wine vinegars, salt and pepper to taste.
Drizzle each salad with the dressing. Serve immediately.
