Artichoke & Hearts of Palm Salad

  • 1 head romaine lettuce, torn in bite-size -pieces
  • 1 head red leaf lettuce; torn in bite-size -pieces
  • 1 (10 oz.) jar artichokes, drained/cut
  • 1 (10 oz) jar hearts of palm, drained
  • 1 (4 oz) jar diced pimento
  • 1 large red onion sliced in rings
  • 3/4 cup grated Parmesan cheese
  • 3/4 cup olive oil
  • 1/3 cup vinegar
 

Method

Combine 1st 6 ingredients in large bowl. Sprinkle with Parmesan cheese. Mix olive oil and vinegar in small bowl and pour over salad, tossing to coat. Serve immediately.

Serves: 8
