Arugula Grilled Cheese Sandwich

Seasonal and delicious.

  • 1 cup of arugula (cleaned and a couple of rough chops to it)
  • 4 slices of sourdough bread
  • 1 Cup of Monterey Jack cheese (grated)
  • 1/2 of a peach (sliced thin)
  • 4 slices of bacon (cooked)
  • 2 ounces of butter or as desired
 

Method

To make 2 sandwiches at a time:  

Preheat a large skillet to medium heat.

Spread butter on one side of each slice of bread.

Place 2 slices of bread in skillet butter side down.

Start placing 1/4 cup of cheese, 2 pieces of bacon, 1/2 cup of Arugula, 3 slices of peach,  another 1/4 cup of cheese and the other 2 slices of bread with butter side up.

Press sandwich down with spatula or another pan. Flip sandwich to other side when cheese melts and bread turns golden brown. Press down on other side to same golden brown doneness.

Remove from pan to plate and slice from corner to corner.  

Yum!
