Chicken Baked with Wine & Artichoke Hearts

  • 1 (3 - 4 pound) chicken, quartered
  • 1/4 teaspoon garlic powder
  • 2 cans (14 oz) artichoke hearts, drained
  • 1 (15 ounce) can tomato sauce
  • 3/4 cup dry white wine
  • 1 teaspoon oregano or to taste
  • 1 teaspoon fresh basil, chopped, or to taste
  • 1 bay leaf       
  • Salt and pepper to taste
 

Method

Preheat oven to 400° F.

Remove skin from chicken. S0prinkle lightly with garlic powder.  Place cut-up chicken in baking pan.

Put artichoke hearts around chicken pieces. Combine tomato sauce, wine, spices  and season to taste with salt and pepper. Pour mixture over chicken.

Bake for 45 minutes in preheated 400° F. oven, basting occasionally.

Remove bay leaf when serving. Bay leaf can choke someone or cut the mouth.

Serves: 4-5
