Artichoke Bean Dip

  • 1 (15 ounce) can navy or pinto beans, drained,
  • 1 ( 14 ounce) can artichoke hearts, drained
  • 1 (7 ounce) can artichoke hearts, drained and minced
  • 2 tablespoons lemon juice
  • 2  cloves garlic, pressed or finely minced
  • 2 whole green onions, chopped
  • Salt and freshly milled black  pepper to taste          
  • Paprika as garnish
 

Method

 

Combine all ingredients EXCEPT the 7 ounces minced artichokes and the paprika in a food processor and blend until smooth.

Stir in the minced artichoke pieces to add texture and enhance the flavor. Put in serving bowl and sprinkle with paprika.
