Baked Yams with Orange & Figs

A wonderful Thanksgiving or Christmas dish - and just as great between the holidays

  • 2 large yams (1 lb. each), boiled, peeled & sliced 1/4" thick
  • 2 oranges, peeled & sliced
  • 3/4 cup dried figs sliced crosswise into fourths
  • 1/4 cup walnut pieces
  • 1/4 cup butter, melted
  • 2 tablespoons honey
  • 1 teaspoon grated orange peel
 

Method

Arrange yam slices, oranges and figs in an 8" round baking pan. Sprinkle with walnuts. Mix together melted butter, honey and orange peel. Pour over all. Cover with foil. 

Bake in preheated 350° F. oven for 30 minutes, until bubbly.  Happy holidays.

Serves: 6
