Mashed potatoes with Roasted Garlic with Chive Garnish

Another great recipe for the Thanksgiving holiday or for Christmas.

  • 4 Idaho potatoes, peeled and cut into 1-inch pieces
  • 3 cloves garlic, roasted, peeled and finely chopped (click for roasting)
  • 1 tablespoon unsalted butter
  • 1/2 cup warmed heavy cream or to taste
  • Salt and white pepper to taste
  • 2 tablespoons chive (or green onion tops) minced
 

Method

In a saucepan, place potatoes in enough cold water to cover them. Bring to a simmer, then cook until soft, about 30 minutes. Drain.

Mash potatoes preferably with a good, old-fashioned potato masher.  Add cheese, garlic, butter and cream. Mix until well-combined.  Season with salt and white pepper to taste.

Put in serving bowl.  Garnish with a dollop of butter and the minced chive.

Serves: 6
