In a saucepan, place potatoes in enough cold water to cover them.
Bring to a simmer, then cook until soft, about 30 minutes. Drain.
Mash potatoes preferably with a good, old-fashioned potato masher. Add cheese, garlic, butter and
cream. Mix until well-combined. Season with salt and white
pepper to taste.
Put in serving bowl. Garnish with a dollop of butter and the minced chive.
