Italian Pasta Fagioli with Ham

Uses ham leftovers fro a Thanksgiving or Christmas holiday meal.

  • 1 pound great northern beans, presoaked
  • 1/3 pound pinto beans, presoaked
  • 5 quarts water
  • 1 small can tomato paste
  • Salt and freshly milled pepper to taste
  • 1/4 cup fresh basil, minced
  • 2 teaspoons dried oregano
  • 2 cloves garlic minced
  • 1 stalk celery finely chopped      
  • 1 cup olive oil  
  • 6  carrots in small dice
  • 2/3 lb smoked ham or 1 smoked ham hock
  • 1/2 pound shells macaroni or other small pasta
 

Method

Cook beans in water for 15 minutes (boil hard until beans sink). Stir in the rest of the ingredients.  Keep at a slowly rolling boil until beans are done.   If soup is too thick add a little more water.

Cook small shell macaroni  to al dente according to package directions. Drain well, add to soup when serving.  When serving add parmesan cheese,  pepper to taste.
