Lobster Creole

  • 3 slices bacon
  • 3 tablespoons vegetable oil
  • 2 medium onions, finely chopped
  • 1 cup okra, chopped
  • 8 ounces prepared tomato sauce
  • 1 cup cooked white rice
  • 1 1/2 cups cooked lobster meat
  • Salt and freshly milled black pepper, to taste
  • Breadcrumbs, buttered to top
 

Method

Preheat oven to 350°F .

Fry bacon until crisp and brown, then drain on absorbent paper.

Stir vegetable oil to bacon dripping remaining in pan.  Stir in okra and onion and saute until tender, but not browned. Add tomato sauce, rice and lobster. Season with salt and pepper.

Pour into a 1-1/2 quart casserole dish. Sprinkle breadcrumbs over lobster mixture.

Bake, uncovered, in preheated 350°F oven about 30 minutes or until top is golden-brown.

Serves: 6
