Warm Lobster Dip

  • 1 can (5 oz.) lobster
  • 1/2 pound cream cheese, cubed
  • 1/4 cup Sauterne or other white wine
  • 1 tablespoon mayonnaise
  • 1 clove garlic, minced
  • 1 teaspoon finely chopped onion
  • 1 teaspoon sugar
  • 1 teaspoon Dijon mustard
  • Pinch of salt & cayenne pepper
 

Method

Drain lobster.  Flake meat with fingers and set aside.

In small saucepan, melt cheese over low heat until smooth, stirring often.  Stir in lobster, wine, mayonnaise, garlic, onion, sugar, mustard, salt and cayenne; heat through, stirring occasionally. Serve in warmed bowl.

Yield: 2 cups
