Dziuba Family Favorite Pasta

Below is our favorite family recipe, because it is so delicious and versatile.  We adapt it by adding whatever seasonal vegetables look good at the market. We sometimes add sauteed chicken too,  It's a year-round favorite here at the Dziuba house!

  • 1 pound pasta, whatever kind you like
  • 3 onions, sliced thin into crescents
  • Olive oil
  • 2 or 3 eggs, beaten
  • 2 cloves finely minced garlic
  • fresh parsley
  • Grated parmesan cheese
  • Salt, pepper
  • Optional add-ins:   2 cups thin-sliced vegetables, sauteed in olive oil (carrots, mushrooms, zucchini, yellow squash, tomatoes, or whatever you like)
  • 1 1/2 cups cooked chicken, shredded or cut into bite-sized pieces
  • Sun-dried tomatoes
  • 4 slices bacon, cooked and diced
 

Method

Saute garlic and onions in olive oil in frying pan. 

Cook pasta. 

In large bowl, beat eggs. 

Drain pasta, add to eggs, and immediately toss well.  Add garlic, onions, fresh parsley, salt, pepper, grated cheese, and any options.  Serve and enjoy.   

This should feed 5 people.  Entering this contest has made me hungry.  I think I'll go make the pasta!  Carol.
