Sweet Potato Stuffing for Roast Turkey

  • 3 cups onion, chopped
  • 2 cups celery, chopped
  • 4 cups sweet potato, mashed
  • 8 cups whole wheat bread, cubed
  • 1 1/2 cups pecans, chopped
  • 1 1/2 teaspoon thyme, dried
  • 1 1/2 teaspoon marjoram, dried
  • 1/2 teaspoon sage
  • 1/2 teaspoon pepper
  • 1/2 cup  skim milk
  • 2  egg whites, slightly beaten
  • 1 tablespoon soy sauce

 

 

Method

Lightly oil nonstick frying pan.  Saute onion and celery until onion is browned.

In large bowl mix sweet potato, bread cubes, pecans, thyme, marjoram, sage and pepper.  Mix well.

Add onion and celery.  Toss to mix.

In separate bowl mix skim milk, egg whites and soy sauce.  Beat lightly and pour over rest of ingredients.  Toss.

Stuff chicken or turkey. If you are not going to use this to stuff a bird lightly grease a large   casserole dish and pour mixture into casserole.  Bake in preheated oven at 350 F. for 30 to 35 minutes, covered.

Yield: Enough for a 12 pound turkey
