Tofu Mayonnaise Spread

Any number of different herbs or flavorings can be added to this mayonnaise to give it an ethnic flavor. It is fun to experiment. Mayo without cholesterol - not a bad thing in this world.

  • 1 cup silken tofu
  • 1/4 cup freshly squeezed lemon juice
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/2 - 1 cup water, as needed
 

METHOD

Put all ingredients in a blender, starting with 1/2 cup water. Puree until creamy, stopping once to push ingredients down side of blender with a rubber spatula. When blended, add water to reach desired thickness.

Transfer to a tightly lidded container. This will keep for 2 - 5 days refrigerated. If it separates, stir to combine.

Yield - About 1 cup
