Grilled Tilapia with Strawberry Relish

Junior uses this relish on any variety of white fish, not just on tilapia. The choice is yours.

Relish

  • 2 tablespoons balsamic vinegar
  • 2 tablespoons orange juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1/2 teaspoon grated orange peel
  • 1/2 teaspoon red pepper flakes
  • 2 cups strawberries, sliced
  • 3 tablespoons raisins
  • 3 tablespoons walnuts, chopped

Grill

  • 2 pounds tilapia fillets
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 2 tablespoons chili powder
 

METHOD

Relish: Combine first 6 ingredients and whisk to blend thoroughly. Add strawberries, raisins and walnuts and toss.

Grill: Spray grill rack with non-stick coating. Rinse tilapia with cold water and pat dry with paper towels. Combine spices and sprinkle on both sides of fillets. Place on heated grill 4 to 5 inches from hot fire.

Cook 4-5 minutes per 1/2 inch measured at thickest point. Turn halfway through cooking time. Serve covered with relish.

Serves: 4 - 6
