Cajun Red Snapper Baked

Though the Cajun seasoning gives spice to this red snapper dish, the stuffing on the inside permeates and flavors the fish.

  • 1 (2 1/2 - 3 lb.) whole red snapper, scaled, gutted and rinsed in cold water
  • Cajun seasoning - to taste
  • Paprika - to taste
  • 6 cloves garlic, crushed
  • 1 cup green onions, chopped (green tops, included)
  • 1 cup celery, finely chopped
  • 3 tablespoons butter or margarine
  • 4 green onions, left whole
  • Fresh parsley, chopped - as a garnish
 

METHOD

Preheat oven to 425° F.

Cover red snapper completely with Cajun seasoning, then sprinkle with paprika and rub in well.

Sauté garlic, green onions and celery in butter until just tender, then stuff cavity of fish with mixture.

Bake Snapper in preheated 425° F 45-50 minutes. Remove from oven and garnish with whole green onion stalks and parsley.

Serve immediately
