Curried Lobster Salad

Grating the shallot will prevent the shallot from overwhelming the lobster and bring out the taste of the curry. Kalyani uses a hot curry for this, but the option is yours.

  • 2/3 cup mayonnaise
  • 1 tablespoon minced parsley
  • 2 teaspoons grated shallot
  • 1 teaspoon curry powder, (hot or mild, your preference)
  • 2 cups cooked lobster
  • 1 cup crimini mushrooms finely sliced
  • 1 bunch watercress, cleaned and thick stems removed

 

 

METHOD

Mix together mayonaise, parsley, shallot and curry powder. Stir well to blend.

Cut lobster into bite-sized pieces. Combine with mushrooms. Add to curry mixture and mix gently to combine.

Serve on a bed of watercress. This peppery taste of watercress enlivens the sweetness of the lobster. Ordinary lettuce doesn't substitute well.
