Royal Peaches

We would say that this is fit for a king, but peaches are considered feminine, so we'll claim it's fit for the queen.

  • 1 cup sugar
  • 1 cup cold water
  • 2 large red skinned peaches
  • 2 cups raspberry ice cream (home made is best!)
  • 5 tablespoons red currant jelly
  • 1/4 cup double cream
 

METHOD

Dissolve sugar in water over a low heat.

In separate pot, scald peaches in boiling water for 3 minutes, remove, allow to cool and skin. Cut in half, and remove stones.

Add to syrup and simmer gently until tender but not too soft, about 30 - 40 minutes. Remove and let cool.

Place a scoop of ice cream in an elegant dessert dish, and top with a peach half, stoned side up.

Fill cup of peach where stone was removed with red currant jelly and a drizzle of cream.

Serves: 4
