Peach Cream Cheese Pie

This is a no-bake peach pie. Delicious when peaches are at their ripest.

  • 2 tablespoons cornstarch
  • 3/4 cup sugar
  • 1/2 cup peach puree
  • 1/2 cup water
  • 2 tablespoons lemon juice
  • 1 small package (3 ounces) cream cheese
  • 1/4 cup powdered sugar
  • 9 inch baked pie shell
  • 4 cups sliced peaches

 

 

METHOD

In pan combine cornstarch and sugar; blend in peach puree, water and lemon juice. Bring to boil, stirring; boil until thickened and clear. Remove from heat; cool. Beat together cream cheese and powdered sugar until smooth. Spread evenly in the pie shell. Spoon the sliced peaches over the cream cheese; pour cooled puree mixture over peaches. Chill until serving time.
