Blueberry Ice Cream

Ice cream and fresh berries is always delicious. The lemon adds zing. An ice cream maker makes this easy and guarantees results. Ice cream is best made with an ice cream maker. A fine investment if you love ice cream.

  • 2 quarts cleaned and hulled blueberries
  • 1 cup granulated sugar
  • 2 tablespoons lemon zest
  • 1 pint heavy cream (whipping cream)
  • 2 pints thin cream (half & half)
  • 1/2 teaspoon salt
 

METHOD

Mash blueberries and put through a coarse sieve. Add sugar and lemon zest to sieved berries and set aside.

Scald cream in a double boiler. Add sugar and salt and mix well and put in the 'fridge to chill (at least one hour).

When chilled, stir in the the sieved and sweetened blueberries. Mix thoroughly.

Place in an ice cream maker and follow directions for freezing.

Yield: about two and one-half quarts.
