METHOD
Preheat oven to 400°F.
Line pie pan with half
the rolled-out dough. Flute edges.
Put sugar, flour, corn
syrup and butter in small saucepan. Cook over low heat until sugar dissolves,
stirring constantly.
Arrange peaches in pastry-lined
pan. Pour caramel mixture over.
Roll out second piece
of dough and cut into strips. Top pie with rest of pastry, lattice style.
Bake in preheated 400°F
oven for 50 minutes or until it appears to be bubbling through the lattice.
Fluted edges will keep it from boiling over.
