Banana Nut Bread

"Our family recipe for banana-nut bread came from a cookbook that my sister's Sunday school class assembled as a gift for Mother's Day.  It became a family favorite, especially for my brother.  When he became terminally ill at a young age, his main request was to experience some of our mother's home cooking through packages of food that I would mail to him in another state.  He so loved my mother's banana-nut bread that he would savor the entire loaf, keeping it only for himself!  I make it in loving memory of my brother and my mother when I prepare it."   • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 3 bananas
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/4 to 1/2 cup walnuts

 

 

METHOD

Preheat oven to 350°F.

Cream together butter and sugar.  Add eggs, flour, soda and nuts.  Whip bananas and add.  Bake in greased loaf pan for 1 hour in preheated 350°F oven.

Yield: 1 pie
