Wipe the quinces over
with a damp cloth to remove fur. Core and quarter them, and place into
a heavy casserole or Dutch oven with water and butter. Sprinkle sugar on evenly.
Place into oven at 200°F
(100°C) overnight, or for approximately 6-8 hours. They should be
a beautiful deep red colour and the syrup reduced.
