Zucchini Cobbler

No limit to what can be done with zucchini.  A cobbler is a great idea

  • 4 cups flour
  • 3 cups sugar
  • 1/2 teaspoon salt
  • 3 sticks margarine
  • 8 cups zucchini, peeled & sliced like apples
  • 2/3 cup lemon juice
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
 

Method

Preheat oven to 375°F.

Combine flour, 2 cups sugar, salt and margarine together. Mix until crumbly and set aside. Cook together sliced zucchini and lemon juice until zucchini is tender. Add remaining 1 cup sugar, nutmeg and cinnamon. Simmer for a few minutes. Add 1/2 cup of crumb mixture and stir until thickened. Let cool. Pat 1/2 crumb mixture in a 9 x 13 inch pan. Bake at 375 degrees for 10 minutes. Pour zucchini mixture over this and sprinkle remaining crumb mixture over top. Sprinkle with cinnamon. Bake in preheated oven for 30 minutes.
