Peach 'n Pecan Spice Cake

  • 1/2 cup butter
  • 1/2 cup brown sugar, packed
  • 1/2 cup sugar
  • 4 eggs
  • 1/3 cup molasses
  • 2 ripe peaches, peeled and chopped
  • 2 1/2 cups flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 2 teaspoon cinnamon
  • 1/4 teaspoon allspice
  • 1/2 cup chopped pecans
 

Method

Preheat oven to 350°F.  Grease and flour 9 inch square pan.

Cream butter and sugars until light and fluffy. Beat in eggs, one at a time. Beat in molasses, combining thoroughly. Stir in peeled, chopped peaches.

Combine dry ingredients and add too wet mixture.  Blend until smooth.

Pour into greased and floured 9 inch square pan. Bake in preheated 350°F oven for 40 to 50 minutes or until down.  Use the toothpick method: insert toothpick into center.  If it comes out dry, cake is done. 

Cut into squares. Top with whipped cream possibly a few ripe peach slice and a sprig of mint.
